Ingredients
  • 4 large potatoes, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Steps
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine potatoes, olive oil, mustard, garlic, oregano, salt and pepper.
  3. Toss until potatoes are evenly coated.
  4. Spread the potatoes onto a baking sheet.
  5. Bake in preheated oven for 30 minutes or until golden brown and tender.
