Ingredients
  • 2 salmon fillets
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 2 tablespoons panko bread crumbs
  • 1 teaspoon fresh parsley, minced

Steps
  1. Preheat oven to 400°F (200°C). Grease a baking sheet.
  2. In a shallow bowl, mix together mustard and olive oil.
  3. Dip each salmon fillet in the mustard mixture, then coat with panko bread crumbs.
  4. Place on the prepared baking sheet. Sprinkle with minced parsley.
  5. Bake in preheated oven for 15 minutes or until cooked through.
  6. Serve hot.
