Ingredients
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup mayonnaise
  • 1/4 cup mustard
  • 1/4 cup diced onion
  • 2 tablespoons white vinegar
  • Salt and pepper to taste

Steps
  1. Place potatoes in a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low and simmer for 10 minutes or until potatoes are tender.
  2. In a small bowl, mix together mayonnaise, mustard, onion, vinegar, salt and pepper. Pour over potatoes and stir gently to combine.
  3. Refrigerate for at least 2 hours before serving.
