Ingredients
  • 1/2 block extra-firm tofu, pressed and cubed
  • 1 tablespoon sesame oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 2 tablespoons soy sauce or tamari (for gluten-free)
  • 2 tablespoons maple syrup or honey
  • 2 cups sliced mushrooms (any type)
  • 1 red bell pepper, sliced into thin strips
  • 3 green onions, chopped

Steps
  1. Heat a large skillet over medium heat. Add the sesame oil to the pan. Once hot, add the cubed tofu and season with garlic powder, ginger and black pepper.
  2. Sauté for about 7 minutes or until golden brown. Then add the soy sauce and maple syrup.
  3. Stir in the mushrooms, bell pepper and green onion. Sauté for an additional 5 minutes until vegetables are tender.
  4. Serve stir fry over cooked rice or quinoa.
