Ingredients
  • 4 slices of bread
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups baby spinach leaves

Steps
  1. Toast the bread in a toaster or in the oven until lightly golden brown.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and mushrooms and cook for 3 minutes, stirring occasionally. Add the salt and pepper.
  3. Add the spinach to the skillet and cook for an additional 2 minutes, stirring occasionally, until the spinach is wilted.
  4. Top each slice of toast with an equal amount of mushroom mixture. Sprinkle with Parmesan cheese and serve.
