Mushroom Strogano…
Ingredients
  • 4 tablespoons butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 tablespoon tomato paste
  • 2 tablespoons all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup vegetable broth
  • 3 tablespoons sour cream

Steps
  1. In a large skillet over medium heat, melt the butter.
  2. Add the onion and garlic and cook until softened.
  3. Add the mushrooms and cook until they start to brown.
  4. Stir in the tomato paste, flour, paprika, salt and pepper.
  5. Pour in the broth and bring to a simmer.
  6. Simmer for 5 minutes or until thickened.
  7. Stir in the sour cream.
  8. Serve over noodles or rice.
