Mushroom Soup
Ingredients
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 cups mushrooms, sliced
  • 3 cups vegetable broth
  • 1/4 cup heavy cream or coconut milk
  • Salt and pepper to taste

Steps
  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
  2. Add the mushrooms and sauté for about 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 15 minutes.
  4. Add the cream or coconut milk and simmer for an additional 5 minutes.
  5. Season with salt and pepper to taste before serving.
