- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 cups mushrooms, sliced
- 3 cups vegetable broth
- 1/4 cup heavy cream or coconut milk
- Salt and pepper to taste
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
- Add the mushrooms and sauté for about 5 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 15 minutes.
- Add the cream or coconut milk and simmer for an additional 5 minutes.
- Season with salt and pepper to taste before serving.
