Mushroom Risotto …
Ingredients
  • 2 tablespoons olive oil
  • 1/2 cup chopped onion
  • 1 1/2 cups Arborio rice
  • 4 cups chicken broth
  • 1 cup white wine
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • 8 ounces sliced mushrooms

Steps
  1. Heat the oil in a large saucepan over medium heat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Stir in the rice and cook for 2 minutes.
  4. Add the broth, wine, pepper, and salt. Bring to a boil.
  5. Reduce heat to low, cover and simmer for 20 minutes.
  6. Stir in butter and mushrooms. Simmer for an additional 10 minutes or until liquid is absorbed.
