Mushroom Quiche
Ingredients
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon nutmeg
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces white mushrooms, sliced thin
  • 3 tablespoons all-purpose flour
  • 3/4 cup grated Gruyere cheese

Steps
  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9 inch glass pie dish.
  2. In a medium bowl whisk together eggs, cream, salt, pepper and nutmeg. Set aside.
  3. In a large skillet melt the butter over medium heat. Add the onions and garlic and cook until softened, about 5 minutes. Add the mushrooms and cook until they are tender and all of the liquid has evaporated, about 8 minutes.
  4. Sprinkle in the flour and stir to combine. Cook for an additional 2 minutes.
  5. Remove from heat and stir in 1/2 cup of the Gruyere cheese.
  6. Spread mushroom mixture into prepared pie dish. Pour egg mixture over top. Sprinkle remaining 1/4 cup cheese over top of quiche.
  7. Bake in preheated oven for 25 to 30 minutes or until set in center.
  8. Allow to cool for 10 minutes before serving.
