Ingredients
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 (10-ounce) packages sliced mushrooms
  • 3 tablespoons all-purpose flour
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 1/2 cups vegetable broth or stock
  • 2 (14-ounce) cans green beans, drained and rinsed

Steps
  1. Preheat oven to 350°F. Grease a 9x13 baking dish.
  2. Heat oil in a large skillet over medium heat. Add onion and garlic and sauté until softened, about 5 minutes.
  3. Add mushrooms and sauté until softened, about 5 minutes more.
  4. Stir in flour, thyme, salt, and pepper until combined. Slowly stir in vegetable broth or stock until smooth.
  5. Add green beans to the skillet and bring to a simmer. Simmer for 5 minutes or until the sauce has thickened.
  6. Pour mixture into prepared baking dish. Bake for 25 minutes or until bubbly.
  7. Serve hot.
