Muffins
Ingredients
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup white sugar
  • 1 egg
  • 1 cup milk
  • 1/3 cup vegetable oil

Steps
  1. Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  2. In a large bowl, combine flour, baking powder, salt and sugar. Make a well in the center and set aside.
  3. In a separate bowl, beat together the egg, milk and oil. Pour into the well of dry ingredients and stir just until moistened.
  4. Fill muffin cups 2/3 full. Bake for 20 to 25 minutes in preheated oven, or until golden brown.
  5. Cool in pan for 5 minutes before removing to cool completely on wire rack.
