- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup granulated sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- Preheat oven to 375°F (190°C). Grease a muffin pan or line with paper liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, whisk together the sugar and oil. Add eggs and vanilla extract and stir until blended.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- Divide the batter evenly among the muffin cups. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in pan for 5 minutes before transferring to a wire rack to cool completely.
