Muffin
Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup granulated sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract

Steps
  1. Preheat oven to 375°F (190°C). Grease a muffin pan or line with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, whisk together the sugar and oil. Add eggs and vanilla extract and stir until blended.
  4. Add the dry ingredients to the wet ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow to cool in pan for 5 minutes before transferring to a wire rack to cool completely.
