Moroccan Couscous
Ingredients
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 cups uncooked couscous
  • 2 tablespoons chopped fresh parsley (optional)

Steps
  1. Heat the oil in a large saucepan over medium heat. Add the onion and garlic; cook and stir until the onion is tender. Stir in the cumin, ginger, turmeric and cayenne pepper; cook for 1 minute.
  2. Pour in the vegetable broth and diced tomatoes with juice; bring to a boil. Stir in the couscous. Reduce heat to low, cover and simmer for 10 minutes.
  3. Remove from heat and fluff with a fork. Stir in parsley if desired.
