Moroccan Chickpea…
Ingredients
  • 1 can chickpeas, drained and rinsed
  • 1/4 cup diced red onion
  • 1/4 cup diced cucumber
  • 1/4 cup diced red pepper
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh mint leaves
  • 1 tablespoon olive oil

Steps
  1. In a large bowl, combine the chickpeas, red onion, cucumber, red pepper, parsley and mint leaves.
  2. Drizzle the olive oil over the top and mix to combine.
  3. Serve chilled or at room temperature.
