Ingredients
  • 2 lbs carrots, peeled and grated
  • 1/4 cup olive oil
  • 1 tablespoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste

  1. In a large bowl, combine the grated carrots, olive oil, cumin, coriander, cinnamon, chili powder and salt and pepper.
  2. Toss to combine.
  3. Serve chilled or at room temperature.
