- 2 lbs carrots, peeled and grated
- 1/4 cup olive oil
- 1 tablespoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cinnamon
- 1/4 teaspoon chili powder
- Salt and pepper to taste
- In a large bowl, combine the grated carrots, olive oil, cumin, coriander, cinnamon, chili powder and salt and pepper.
- Toss to combine.
- Serve chilled or at room temperature.
