Mixed Greens
Ingredients
  • 2 tablespoons extra-virgin olive oil
  • 1/4 cup diced red onion
  • 1 clove garlic, minced
  • 2 cups baby spinach leaves
  • 2 cups baby kale leaves
  • 1/4 cup slivered almonds
  • 1/4 cup dried cranberries
  • Salt and freshly ground black pepper, to taste

Steps
  1. Heat olive oil in a large skillet over medium heat. Add red onion and garlic, and cook, stirring occasionally, until fragrant and translucent, about 2 minutes.
  2. Add spinach and kale to the skillet; cook until wilted, about 3 minutes.
  3. Stir in almonds and cranberries; season with salt and pepper, to taste. Serve immediately.
