- 1 head of lettuce
- 1 cup of spinach
- 2 tomatoes, diced
- 1/4 cup onion, diced
- 1/4 cup cucumber, diced
- 1/4 cup carrots, diced
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- In a large bowl, combine the lettuce, spinach, tomatoes, onion, cucumber and carrots.
- In a small bowl, whisk together the olive oil and balsamic vinegar.
