Ingredients
  • 1 lb. ground beef
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 (15 oz.) can refried beans
  • 1 (4 oz.) can diced green chiles, drained
  • 1 (10 oz.) can enchilada sauce
  • 8 (10 inch) flour tortillas
  • 2 cups shredded Cheddar cheese

Steps
  1. In a large skillet over medium heat, cook the ground beef, onion and bell pepper until the beef is no longer pink. Drain off any excess fat.
  2. Stir in the refried beans, chiles and enchilada sauce. Simmer for 10 minutes.
  3. Preheat oven to 350 degrees F (175 degrees C).
  4. Spoon about 1/3 cup of the beef mixture down the center of each tortilla. Sprinkle with cheese and roll up.
  5. Place burritos in a 9x13 inch baking dish. Bake for 20 minutes in preheated oven.
  6. Serve hot.
