- 1 lb. ground beef
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1 (15 oz.) can refried beans
- 1 (4 oz.) can diced green chiles, drained
- 1 (10 oz.) can enchilada sauce
- 8 (10 inch) flour tortillas
- 2 cups shredded Cheddar cheese
- In a large skillet over medium heat, cook the ground beef, onion and bell pepper until the beef is no longer pink. Drain off any excess fat.
- Stir in the refried beans, chiles and enchilada sauce. Simmer for 10 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Spoon about 1/3 cup of the beef mixture down the center of each tortilla. Sprinkle with cheese and roll up.
- Place burritos in a 9x13 inch baking dish. Bake for 20 minutes in preheated oven.
- Serve hot.
