- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 cup cotija cheese, plus more for garnish
- 2 tablespoons chopped cilantro, plus more for garnish
- Preheat grill to medium-high heat.
- Grill corn until lightly charred on all sides, about 10 minutes.
- In a small bowl, mix together mayonnaise, sour cream, chili powder and garlic powder.
- Brush each ear of corn with the mayonnaise mixture and sprinkle with cotija cheese.
- Grill until cheese is melted and lightly browned, about 2 minutes.
- Garnish with cilantro and extra cotija cheese before serving.
