Ingredients
  • 4 ears corn, husks removed
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 cup cotija cheese, plus more for garnish
  • 2 tablespoons chopped cilantro, plus more for garnish

Steps
  1. Preheat grill to medium-high heat.
  2. Grill corn until lightly charred on all sides, about 10 minutes.
  3. In a small bowl, mix together mayonnaise, sour cream, chili powder and garlic powder.
  4. Brush each ear of corn with the mayonnaise mixture and sprinkle with cotija cheese.
  5. Grill until cheese is melted and lightly browned, about 2 minutes.
  6. Garnish with cilantro and extra cotija cheese before serving.
