Ingredients
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 jalapeno, seeded and diced (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups cooked brown or white rice
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chilies

Steps
  1. Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic, bell pepper, jalapeno (if using), cumin, chili powder, paprika, salt and pepper. Cook for 2-3 minutes.
  2. Add the cooked rice and stir to combine. Add the black beans and tomatoes with their juice. Stir to combine.
  3. Cover the skillet and cook for 10-15 minutes or until heated through. Serve hot.
