Ingredients
2 cups long-grain white rice
1/4 cup vegetable oil
1 onion, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon dried oregano
3 cups chicken broth or water
1 (14.5 ounce) can diced tomatoes with green chilies

Steps
Heat oil in a large saucepan over medium heat. Add onion and garlic; cook and stir until the onion is tender.
Stir in the rice, cumin, chili powder, and oregano; cook for 1 minute.
Pour in the chicken broth and diced tomatoes with green chilies. Bring to a boil.
Reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender.
Fluff with a fork before serving.
