Mexican Rice
Ingredients
  • 2 cups long-grain white rice
  • 1/4 cup vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 3 cups chicken broth or water
  • 1 (14.5 ounce) can diced tomatoes with green chilies

Steps
  1. Heat oil in a large saucepan over medium heat. Add onion and garlic; cook and stir until the onion is tender.
  2. Stir in the rice, cumin, chili powder, and oregano; cook for 1 minute.
  3. Pour in the chicken broth and diced tomatoes with green chilies. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender.
  5. Fluff with a fork before serving.
