Ingredients
  • 1 cup quinoa
  • 1/2 cup black beans
  • 1/2 cup corn
  • 1/4 cup diced red onion
  • 1/4 cup diced red pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon cumin
  • 1 tablespoon olive oil

Steps
  1. In a medium saucepan, bring 1 1/2 cups of water to a boil. Add the quinoa, reduce the heat to low and simmer for 15 minutes.
  2. In a separate saucepan, heat the olive oil over medium-high heat. Add the onions and peppers and cook until softened, about 5 minutes.
  3. Add the beans, corn, salt and cumin and cook for an additional 5 minutes.
  4. Combine the cooked quinoa and vegetables in a bowl and serve.
