Mexican Lasagna
Ingredients
  • 1 lb. ground beef
  • 1/2 cup chopped onion
  • 1 (16-ounce) can refried beans
  • 1 (10-ounce) can enchilada sauce
  • 1 (4-ounce) can diced green chilies, undrained
  • 6 (6-inch) corn tortillas, cut into 1/2-inch strips
  • 2 cups shredded Monterey Jack cheese
  • 2 cups shredded Cheddar cheese

Steps
  1. Preheat oven to 350°F. Brown ground beef and onion in a large skillet over medium heat; drain. Stir in refried beans, enchilada sauce and chilies; set aside.
  2. Lightly grease a 9x13 inch baking dish. Arrange half of the tortilla strips in the bottom of the dish. Top with half of the beef mixture, 1 cup Monterey Jack cheese and 1 cup Cheddar cheese.
  3. Repeat layers and top with remaining cheeses. Bake for 25 minutes or until heated through.
  4. Let stand 10 minutes before cutting into squares to serve.
