Mexican Cauliflow…
Ingredients
  • 1 head cauliflower, grated
  • 1/4 cup olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Steps
  1. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened.
  2. Add the bell pepper, jalapeno pepper, chili powder, cumin and smoked paprika. Cook for another few minutes until fragrant.
  3. Add the grated cauliflower to the skillet and stir to combine. Cook for about 10 minutes or until the cauliflower is tender.
  4. Season with salt and pepper to taste.
  5. Serve warm.
