- 1/2 cup olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup red wine vinegar
- 6 cups Romaine lettuce, chopped
- 1 red onion, diced
- 3 tomatoes, diced
- 15 ounces chickpeas, drained and rinsed
- 4 ounces feta cheese, crumbled
- In a small bowl whisk together the olive oil, garlic, oregano, salt and pepper.
- In a separate bowl mix together the vinegar and lettuce.
- In a large bowl combine the lettuce mixture with the onion, tomatoes and chickpeas.
- Pour the dressing over the salad and toss to combine.
- Sprinkle with feta cheese.
- Serve immediately.
