Ingredients
  • 1/2 cup olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup red wine vinegar
  • 6 cups Romaine lettuce, chopped
  • 1 red onion, diced
  • 3 tomatoes, diced
  • 15 ounces chickpeas, drained and rinsed
  • 4 ounces feta cheese, crumbled

Steps
  1. In a small bowl whisk together the olive oil, garlic, oregano, salt and pepper.
  2. In a separate bowl mix together the vinegar and lettuce.
  3. In a large bowl combine the lettuce mixture with the onion, tomatoes and chickpeas.
  4. Pour the dressing over the salad and toss to combine.
  5. Sprinkle with feta cheese.
  6. Serve immediately.
