- 1 cup orzo
- 2 tablespoons olive oil
- 1/4 cup feta cheese, crumbled
- 1/4 cup diced tomatoes
- 1/4 cup diced cucumber
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 1 tablespoon red onion, minced
- Cook orzo according to package directions and drain.
- In a medium bowl, combine cooked orzo, olive oil and feta cheese.
- Add tomatoes, cucumber, parsley and mint.
- Stir in red onion.
- Chill before serving.
