Ingredients
  • 1 cup couscous
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • salt and pepper to taste
  • 1 red bell pepper, diced
  • 1 cucumber, peeled and diced
  • 1/4 cup chopped fresh parsley

Steps
  1. In a medium saucepan, bring 1 1/2 cups of water to a boil.
  2. Add the couscous, stir once, then cover and remove from heat.
  3. Let stand for 5 minutes or until all the water is absorbed.
  4. Fluff with a fork and transfer to a large bowl.
  5. In a small bowl whisk together the olive oil, lemon juice, garlic, oregano, cumin, salt and pepper.
  6. Pour over the couscous and stir until evenly combined.
  7. Add the bell pepper, cucumber and parsley. Stir to combine.
  8. Serve warm or cold.
