- 1 can of chickpeas, drained and rinsed
- 1/4 cup of red onion, diced
- 1/4 cup of cucumber, diced
- 1/4 cup of kalamata olives, pitted and chopped
- 2 tablespoons of fresh parsley, chopped
- 2 tablespoons of fresh mint, chopped
- 1 tablespoon of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
- In a large bowl combine the chickpeas, red onion, cucumber, olives, parsley and mint.
- In a small bowl whisk together the olive oil and lemon juice.
- Pour the dressing over the salad and toss to combine.
- Season with salt and pepper to taste.
- Serve immediately or refrigerate until ready to serve.
