Ingredients
  • 1 can of chickpeas, drained and rinsed
  • 1/4 cup of red onion, diced
  • 1/4 cup of cucumber, diced
  • 1/4 cup of kalamata olives, pitted and chopped
  • 2 tablespoons of fresh parsley, chopped
  • 2 tablespoons of fresh mint, chopped
  • 1 tablespoon of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Steps
  1. In a large bowl combine the chickpeas, red onion, cucumber, olives, parsley and mint.
  2. In a small bowl whisk together the olive oil and lemon juice.
  3. Pour the dressing over the salad and toss to combine.
  4. Season with salt and pepper to taste.
  5. Serve immediately or refrigerate until ready to serve.
