Mayonnaise
Ingredients
  • 1 egg yolk
  • 1 teaspoon Dijon mustard
  • 2 tablespoons lemon juice
  • salt and pepper to taste
  • 1 cup vegetable oil

Steps
  1. In a medium bowl, whisk together the egg yolk, mustard, lemon juice and salt and pepper.
  2. Slowly drizzle in the oil while whisking until the mixture is thick and creamy.
  3. Store in an airtight container in the refrigerator for up to 1 week.
