- 2 cups mashed potatoes
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons butter, melted
- In a large bowl, combine mashed potatoes, flour, salt and pepper.
- Add melted butter and mix until combined.
- Heat a large skillet over medium heat and coat with cooking spray.
- Drop heaping spoonfuls of the potato mixture into the skillet and cook for 3-4 minutes on each side or until golden brown.
- Serve warm.
