Mascarpone Cheese…
Ingredients
  • 1/2 cup butter
  • 3/4 cup graham cracker crumbs
  • 3 tablespoons sugar
  • 4 8-ounce packages cream cheese, softened
  • 1 1/2 cups sugar
  • 1/4 teaspoon salt
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup mascarpone cheese

Steps
  1. Preheat oven to 350°F. Grease a 9-inch springform pan.
  2. In a medium bowl, combine the butter, graham cracker crumbs, and 3 tablespoons sugar. Press into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese until smooth. Gradually beat in 1 1/2 cups sugar and salt. Beat in eggs one at a time. Add vanilla and mascarpone cheese; mix well.
  4. Pour batter into prepared pan.
  5. Bake for 40 minutes or until center is almost set.
  6. Cool completely before serving.
