Ingredients
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger root
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon cayenne pepper (optional)
  • 3 boneless skinless chicken breasts, cut into cubes
  • 1 (14 ounce) can diced tomatoes with juice
  • 1/2 cup plain yogurt or coconut milk (optional)
  • Salt and pepper to taste

Steps
  1. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Stir in the ginger, garam masala, cumin, coriander, turmeric, and cayenne pepper. Cook for 1 minute.
  3. Add the chicken cubes and cook until lightly browned on all sides. Stir in the tomatoes with their juice.
  4. Reduce heat to low and simmer for 20 minutes or until chicken is cooked through. Stir in yogurt or coconut milk if desired.
  5. Season with salt and pepper to taste. Serve hot.
