- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon grated ginger root
- 2 teaspoons garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric powder
- 1/2 teaspoon cayenne pepper (optional)
- 3 boneless skinless chicken breasts, cut into cubes
- 1 (14 ounce) can diced tomatoes with juice
- 1/2 cup plain yogurt or coconut milk (optional)
- Salt and pepper to taste
- Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Stir in the ginger, garam masala, cumin, coriander, turmeric, and cayenne pepper. Cook for 1 minute.
- Add the chicken cubes and cook until lightly browned on all sides. Stir in the tomatoes with their juice.
- Reduce heat to low and simmer for 20 minutes or until chicken is cooked through. Stir in yogurt or coconut milk if desired.
- Season with salt and pepper to taste. Serve hot.
