- 4 1/2 tsp. unflavored gelatin
- 1/2 cup cold water
- 2 cups granulated sugar
- 1 cup light corn syrup
- 1/4 tsp. salt
- 2 tsp. vanilla extract
- In the bowl of a stand mixer, sprinkle the gelatin over the cold water and let it sit for 5 minutes.
- In a medium saucepan, combine the sugar, corn syrup, and salt over medium heat. Stir until the sugar is dissolved.
- Increase the heat to high and bring to a boil, stirring constantly.
- Once it is boiling, reduce the heat to low and simmer until it reaches 240°F on a candy thermometer.
- Remove from heat and turn on the stand mixer with whisk attachment at low speed.
- Slowly pour in the hot sugar syrup in a steady stream down the side of the bowl.
- Once all of it has been added, increase speed to high and beat for 10 minutes until thickened.
- Add in vanilla extract during last few minutes of mixing.
- Pour into greased 9x13 inch pan and let cool for 3 hours or overnight before cutting into squares.
- Dust with powdered sugar before serving.
