Marshmallows
Ingredients
  • 4 1/2 tsp. unflavored gelatin
  • 1/2 cup cold water
  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/4 tsp. salt
  • 2 tsp. vanilla extract

Steps
  1. In the bowl of a stand mixer, sprinkle the gelatin over the cold water and let it sit for 5 minutes.
  2. In a medium saucepan, combine the sugar, corn syrup, and salt over medium heat. Stir until the sugar is dissolved.
  3. Increase the heat to high and bring to a boil, stirring constantly.
  4. Once it is boiling, reduce the heat to low and simmer until it reaches 240°F on a candy thermometer.
  5. Remove from heat and turn on the stand mixer with whisk attachment at low speed.
  6. Slowly pour in the hot sugar syrup in a steady stream down the side of the bowl.
  7. Once all of it has been added, increase speed to high and beat for 10 minutes until thickened.
  8. Add in vanilla extract during last few minutes of mixing.
  9. Pour into greased 9x13 inch pan and let cool for 3 hours or overnight before cutting into squares.
  10. Dust with powdered sugar before serving.
