Mardi Gras Gumbo
Ingredients
  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour
  • 2 onions, chopped
  • 2 celery stalks, chopped
  • 1 green bell pepper, seeded and chopped
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 2 teaspoons dried thyme leaves
  • 3 tablespoons tomato paste
  • 2 quarts chicken broth or stock

Steps
  1. In a large pot over medium heat, heat oil. Whisk in flour and cook until it turns a dark brown color. Add onions, celery, bell pepper and garlic and cook until softened.
  2. Add bay leaves, thyme, tomato paste and chicken broth or stock. Bring to a boil then reduce heat to low. Simmer for 1 hour.
  3. Stir occasionally and season with salt and pepper to taste before serving.
