- 2 large sweet potatoes
- 1/2 cup maple syrup
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 3 large eggs, lightly beaten
- 1/2 cup heavy cream or evaporated milk
- Preheat oven to 350°F. Grease 9-inch pie plate.
- Boil sweet potatoes until tender. Peel and mash. Measure 1 1/2 cups mashed sweet potatoes.
- In a medium bowl, combine mashed sweet potatoes, maple syrup, cinnamon, nutmeg, salt and eggs. Mix well.
- Pour mixture into prepared pie plate.
- Bake for 40 minutes or until set.
- Allow to cool before serving.
