Manhattan Clam Ch…
Ingredients
  • 4 cans minced clams
  • 4 slices bacon, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups potatoes, peeled and cubed
  • 2 (14.5 ounce) cans chicken broth
  • 2 (14.5 ounce) cans diced tomatoes with juice
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon ground black pepper

Steps
  1. In a large pot over medium heat, cook bacon until crisp. Add onion and garlic; cook until tender. Stir in potatoes and chicken broth. Bring to a boil; reduce heat and simmer 10 minutes.
  2. Add clams with juice, tomatoes with juice, thyme and pepper; simmer 10 minutes longer.
  3. Serve hot.
