- 2 cups cooked coconut rice
- 1 mango, diced
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 jalapeno, seeded and minced
- 2 tablespoons lime juice
- In a medium bowl, combine the cooked coconut rice, mango, red onion, cilantro and jalapeno.
- Add lime juice and stir to combine.
- Serve immediately or chill until ready to serve.
