Ingredients
  • 2 cups cooked coconut rice
  • 1 mango, diced
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeno, seeded and minced
  • 2 tablespoons lime juice

  1. In a medium bowl, combine the cooked coconut rice, mango, red onion, cilantro and jalapeno.
  2. Add lime juice and stir to combine.
