- 2 cups diced mangoes
- 1/2 cup chopped onions
- 1/4 cup white vinegar
- 1/4 cup brown sugar
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cumin
- In a medium saucepan, combine the mangoes, onions, vinegar, sugar, ginger and cumin.
- Bring to a boil over medium-high heat.
- Reduce heat and simmer for 15 minutes.
- Serve warm or cold.
- Store in an airtight container in the refrigerator for up to one week.
