- 4 large baking potatoes
- 1/2 cup butter, melted
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 3 tablespoons chopped fresh chives
- salt and pepper to taste
- Preheat oven to 375 degrees F (190 degrees C).
- Wash potatoes and pierce each several times with a fork.
- Bake in preheated oven for 45 minutes.
- Remove from oven and allow to cool slightly.
- Cut potatoes in half lengthwise, and scoop out insides, leaving enough potato inside the skin so that it holds its shape.
- Mash potato insides with butter, sour cream, cheese, chives, salt, and pepper.
- Spoon mashed potatoes back into potato skins.
- Bake for an additional 15 minutes.
