Ingredients
  • 4 large baking potatoes
  • 1/2 cup butter, melted
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 3 tablespoons chopped fresh chives
  • salt and pepper to taste

Steps
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Wash potatoes and pierce each several times with a fork.
  3. Bake in preheated oven for 45 minutes.
  4. Remove from oven and allow to cool slightly.
  5. Cut potatoes in half lengthwise, and scoop out insides, leaving enough potato inside the skin so that it holds its shape.
  6. Mash potato insides with butter, sour cream, cheese, chives, salt, and pepper.
  7. Spoon mashed potatoes back into potato skins.
  8. Bake for an additional 15 minutes.
