Ingredients
  • 6-8 large baking potatoes, peeled and diced
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled

Steps
  1. In a large saucepan, cook potatoes in boiling salted water for 15 minutes or until tender; drain. In the same saucepan, melt butter over medium heat. Add onion; cook and stir until tender. Stir in flour until blended; gradually add broth and milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in potatoes, salt and pepper. Simmer for 10 minutes or until heated through.
  2. Top each serving with cheese, bacon and additional butter if desired.
