- 1 9-inch unbaked pie shell
- 3 egg yolks
- 1/2 cup white sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1 1/2 cups hot water
- 3 tablespoons butter, melted
- 1/3 cup lime juice
- 1 teaspoon grated lime zest
- Preheat oven to 350 degrees F (175 degrees C). Place the pie shell in a 9 inch pie plate.
- In a medium bowl, beat together the egg yolks, sugar, flour and salt until blended.
- Gradually stir in the hot water and melted butter. Add the lime juice and zest.
- Pour mixture into the unbaked pie shell.
- Bake for 25 minutes in the preheated oven, or until a knife inserted into the center of the filling comes out clean.
- Cool on a wire rack. Top with meringue and bake for an additional 10 minutes at 350 degrees F (175 degrees C), or until lightly browned.
